Bottoms Up: William Yeoward’s Celebration Cup

William Yeoward American Bar

Christopher (of the Beaufort Bar at the Savoy) tells me he invented this fresh, clean drink as a summer alternative to Pimm’s.  I can’t wait to offer it when I have parties in my garden in the country — it looks so beautiful, with three kinds of berries trapped between layers of ice. Serve the cocktail in a wine glass and let sit for a few moments to allow the flavors of the fruit to develop. Et voila—you get the ideal confection for a sunny gathering.


Approximately 5oz Champagne
1 Strawberry, cut into 4 pieces
1 Blackberry
2 Raspberries
2 Bar Spoons of Elderflower Liqueur
3/4oz Rhubarb Liqueur

Fill a wine glass two-fifths with Champagne.
Add three cubes of ice, then the fruit and the liqueurs.
Top up with more ice and more Champagne.
